Need UserMapping.XML file format for Global Mapping

I found the file for this that will most likely be the format that you are looking for. 
C:\Users\<your user>\AppData\Roaming\Metalogix\Content Matrix Console - Sharepoint Edition\UserMappings.mls

This file along with the URLMapping, GUIDMapping are all here. You can possibly use this format to generate the XML you need to import it.

Add a few mappings through the UI so it generates some content.

I am able to generate User Mapping File from source and target user details. However, there are few users having special character (') in the UPN (target mapping value). When I try to upload generate user mapping file XML (under Configure global Mapping option), it is failing. Can you please suggest what's way to pass such mapping in XML.

for example: <Mapping Source='CONTOSO\aobrien' Target='i:0#.f|membership|Ashlei.O'Brien@contoso.onmicrosoft.com' />
