LiteSpeed generates a TON of logs (over 3000 per day) and I've had repeated issues with it *almost* crashing my production database server by filling up the C: drive. Is there an option to have LiteSpeed clean up after itself?

Did right-click on SQL instance > Support > LiteSpeed logging and added a checkmark to the "Delete log file on success" option. Hopefully that helps.

Yes, that is the option I would suggest.
You can also use a "cleanup maintenance plans" task to delete old logs files.
