I'm trying to find some help/documentation on uninstalling Content Matrix. I believe the version we have is "Content Matrix Organizer 7.3.0.1755" which is what's shown in the SharePoint Central Admin, but I can't seem to find anything on the knowledgebase for this version.

That version is several years out of support. I don't know if we have any documentation on removing Organizer; but I will ask.
